Prickly Pear
The allure of this exotic fruit is magical, yet dangerous! Its mystique comes from its naturally vibrant fuchsia color of its pulp. But beware - being from the cactus family, its skin pricks. Prickly Pears are the fruit that grow on top of the flat cactus pad; when peeled the pulp has a delicate melon-fig taste that adds a unique flavor to cocktail and dessert recipes. 

Each jar is the equivalent of nearly 4 Prickly Pears.

Prickly Pear Vinaigrette

Yield: 1 cup
    • 1/4 cup Culinary Traditions™ Prickly Pear,  thawed
    • 2 tbsp. lime juice
    • 2 tbsp. rice wine vinegar
    • 1 tsp. lime zest, finely minced
    • 2 tsp. shallot, minced
    • 1/2 cup + 2 tbsp. canola oil
    • 1 tsp. kosher salt
    • Chiffonnade of 10 mint leaves

Method:
1. Combine all ingredients in a bowl and whisk together.
2. For best flavor, allow dressing to sit for one hour before use.
3. Whisk again before serving.
