  1. What is fruit of the cocoa?

    The fruit of the cocoa is the rosy-white pulp that surrounds the cocoa beans inside the cocoa pod or fruit. The cocoa seeds are collected for chocolate production. The pulp is separated from the cocoa seeds and further processed into puree. Although some of the pulp is consumed by the local population, most of the pulp has been treated as a by-product of cocoa seed harvesting.

  2. Where does fruit of the cocoa come from or the raw materials to produce the puree?

    Depending on the variety of cocoa tree, cocoa trees are grown in Central America, the Caribbean, Brazil, Africa and Trinidad.


  3. How do you obtain the caramel flavor in the carmelized pineapple?

    A natural caramel flavor which enhances the natural sweetness of the pineapple juice concentrate is utilized.


  4. What is the mixed berry in Red Mixed Berry Puree? Is there one berry more prominently used to make it?

    Our Red Mixed Berry puree contains strawberries, sour cherries, cranberries, black currants, and blueberries. The strawberry and sour cherry flavor notes dominate the flavor profile.


  5. What’s in the Citrus Sensation Concentrate?

    Citrus Sensation is a 100% Juice concentrate blend with other natural flavors. The flavor profile is tangerine/orange with sweet honeysuckle flower overtones. It also contains the following juice concentrates - apple, pear, pineapple, lemon and lime juice concentrates.


  6. What is the strength of the concentrates in the new line extension?
    • Mandarin/Tangerine is a 3.2x concentrate. To dilute to single strength juice, add 1 part Mandarin/Tangerine to 2.2 parts water. For example, 3 oz Mandarin/Tangerine to 6.5 oz water.
    • Carmelized Pineapple is a 3x concentrate. To dilute to single strength juice, add 1 part Carmelized Pineapple to 2 parts water. For example, 3 oz pineapple to 6 oz. water.
    • Citrus Sensation is a 5.5x concentrate. To dilute to single strength juice, add 1 part Citrus Sensation to 4.5 parts water. For example, 2 oz Citrus Sensation to 9 oz water.
  7. What is the shelf life of each product of the new flavors?

    The shelf life is 2 years from date of manufacture if frozen. This Best By date is ink-jet coded on the side of the jar. Once thawed, the shelf life is up to 10 days when properly stored below 40° F.

  8. What’s the difference between a tangerine and a mandarin?

    Mandarins are the largest and most varied group of edible citrus fruits. Tangerines are varieties of mandarin that have more brightly colored flesh and peel. Varieties that are typically marketed as tangerines are Dancy, Sunburst, and Honey.

  9. Why does Citrus Sensation not arrive "frozen" when I order it?

    The brix level for Citrus Sensation is 65 and will only freeze at temperatures at below -10° F. Unless the product is shipped in freezer trucks that support -10° F. or below, the product consistency will be thick, but not frozen solid upon receipt.
