| | 1/2 oz. The Perfect Purée Key Lime Concentrate, thawed |
| | 1/2 oz. simple syrup |
| | 2 pineapple, sliced 1/3" slices quartered |
| | 1 large thyme sprig |
| | 2 oz. Plymouth Gin |
| | 1 oz. The Perfect Purée Passion Fruit Concentrate, thawed |
| | Pineapple leaf and thyme sprig for garnish |
| Method: | |
| 1. | In a pint glass, and Key Lime Concentrate , simple syrup, pineapple, thyme and press with a muddler. |
| 2. | Add gin and Passion Fruit Concentrate |
| 3. | Fill glass with ice |
| 4. | Shake vigorously for 6 seconds |
| 5. | Strain into cocktail glass. |
| 6. | Garnish with pineapple leaf and thyme sprig. |
