| | 1 1/2 oz. rhum agricole |
| | 1/2 oz. spiced simple syrup |
| | 1/2 oz. fresh lemon juice |
| | 1 oz. The Perfect Purée Pear, thawed |
| | Ice cubes |
| | Pear slice, lemon twist or candied lemon peel, for garnish |
| Method: | |
| 1. | Shake all ingredients and strain into a chilled glass. Garnish and serve. |
| Spiced Simple Syrup: | |
| | 2 cups sugar |
| | 1 1/2 cups water |
| | 1/4 cup allspice berries |
| | 1/4 cup cloves |
| | 2 cinnamon sticks |
| | 3 nutmegs |
| | 1 tbsp. whole black peppercorns |
| | 1 tsp. vanilla extract |
| Method: | |
| 1. | Combine all ingredients except vanilla in a saucepan over low heat. |
| 2. | Bring to a boil and turn off heat. |
| 3. | Strain into a clean glass container and add vanilla extract, then shake to combine. |
| 4. | Keeps three weeks refrigerated. |

| This drink pairs well with roasted turkey with sage dressing, roasted duck or salty cheeses. |
