Unlike other mixologists, Seger is a Certified Culinary Professional (CCP) which explains his ingredient obsession. The result is a culinary-mixology fusion, where he utilizes only the freshest ingredients to exceed the limits of cocktail flavor profiles.

Seger finds inspiration from chefs and beverage professionals alike. Dale “King Cocktail” Degroff and Master Mixologist Francesco Lafronconi have influenced Seger’s beverage creativity. Time with Chef Serge Knapp at Chez Julien in Strasbourg ignited Seger’s passion for the kitchen. At the French Laundry, Thomas Keller’s devotion for only the freshest ingredients made a lasting impression on Seger.

Seger, dubbed Chicago’s Godfather of Cocktails, left the world of restaurant management to found HUM Spirits Company in 2009, where he showcases his flair for libations with depth of flavor and botanical influences.

A graduate of Cornell University’s School of Hotel Administration, Seger has been featured in numerous publications including Cigar Aficionado, Wine Spectator, The New York Times and Santé Magazine. He was named a 2005 Rising Star Mixologist and dubbed a “Spirits Guru” by Food & Wine. Seger’s Kentucky Long Shot was the official cocktail of the 1998 Breeder’s Cup and his El Corazon Margarita, developed while he was at Chicago’s Nacional 27, has garnered numerous press accolades.
