A waterfront pub on Lake Oswego makes Stickmen Brewing Co. a destination for nearby Portlanders and vacationers looking for two things the Northwest is known for — great beer and beautiful scenery.

Established in 2012, Stickmen operates the Lake Oswego Pub with a full American-style menu and the Tualatin Brew Hall, which opened in 2016 with a 30-barrel production brewery and a tap room that serves wood-fired pizza.

Stickmen distinguishes itself with a diverse list of year-round beers, seasonal and occasional beers and an extensive list of experimental one-offs that includes a kettle-soured beer with The Perfect Purée Prickly Pear Puree. Kid Vegas (ABV 7.1%) is fermented with Prickly Pear for a moderately tart taste with aromas of pear, strawberries, and melon.

Head Brewer Cobi Brothers adds the purée directly to the fermenter a couple of days before fermentation is complete. The tartness is mild enough to have made it a new favorite. Customers call Kid Vegas sweet and tasty, with a smooth, bright and fruity prickly pear flavor that makes the beer stand out.

So far Cobi has only experimented with Prickly Pear but says he plans to use The Perfect Purée Papaya Puree in a sour beer with tropical-forward hops.

“Craft is at the heart of what we do,” Cobi says. “The Perfect Purée allows us to create unique products in a market that is literally doing almost everything possible.”

Stickmen distributes its beers throughout metro Portland and coastal Oregon and plans to expand its distribution territory as it grows. Its mission to enrich the lives of its customers includes being active in the Lake Oswego community by sponsoring an annual fun run and, in 2018, hosting the first Tualatin Winter Brew Festival to support local high school athletics.
