Chef Dave Martin • 3/4 cup The Perfect Purée Blackberry Puree, thawed • 2 cups Tabasco Green Jalapeño • 1 cup honey • 3/4 cup unsalted butter • 2 tbsp. malt vinegar • 1/2 cup brown sugar • 2 tbsp. cider vinegar • 1/2 tsp. 50/50 kosher salt and black pepper Method: 1. Whisk all ingredients together and bring to a boil and adjust seasoning, as needed. Drop wings or tenders into warm mix and toss in bowl or in sauté pan and serve.
