For the Cara Cara drink:
    • 10 oz. Mezcal El Silencio
    • 2 1/2 oz. The Perfect Purée Key Lime Concentrate, thawed
    • 1 oz. The Perfect Purée Blood Orange Concentrate, thawed
    • 1 oz. Yakami Orchard 100% Pure Japanese Sudachi Juice
    • 6 1/2 oz. white grapefruit
    • 7 oz. california avacado honey
    • Float Sweet Hibiscus Spiced Syrup
    • Pink Himalayan citrus salt (rim)
Method:
1. Divide the recipe in 2 shakers, add ice and shake vigorously, strain into the iSi Twist & Sparkle soda dispense system charge with CO2. Let chill and sit, rim collins glass with pink himalayan citrus salt, add crush ice, pour and serve with a smile.
For the Sweet Hibiscus Spiced Syrup:
    • The Perfect Purée Sweet Hibiscus Blend, thawed
    • Angostura Bitters
Method:
1. In a medium sauce pan bring to a 176 degrees, Sweet Hibiscus and Angostura Bitters. Let chill.
