Carmelized Pineapple Mojito

    • 1 1/2 oz. Pyrat Rum
    • 2 oz. The Perfect Purée of Napa Valley Carmelized Pineapple Concentrate,  thawed
    • 1 oz. mint leaves
    • 2 limes, sliced
    • 1 oz. simple syrup
    • splash soda
Method:
1. In a pint glass add the mint and limes and muddle/mash them together. Pour the rum, caramelized pineapple and syrup (no soda) into a martini shaker & shake all ingredients together feverishly. Pour over ice in a wine glass and top off with a splash of soda.
