Catalonian Sun (AKA Vodka a la Romesco)

    • 1 1/2 oz. vodka
    • 1 oz. The Perfect Purée Roasted Red Pepper Puree,  thawed
    • 1 oz. tomato juice
    • 1/2 oz. fresh parsley
    • 1/2 oz. almonds
    • 1/4 garlic clove
    • 1/4 oz. Dimitri’s Bloody Mary Seasoning
    • 1/8 Fresno Chili
    • dash of smoked paprika
    • dash of olive oil
    • Maldon Sea Salt and fresh black pepper
    • bacon wrapped date (garnish)
    • marinated Manchego cheese (garnish)
    • piquillo pepper (garnish)
    • spanish olive (garnish)
    • chive blossom (garnish)
    • parsley blossom (garnish)
    • optional sweet onion salt (rimmer)
Method:
1. Rim serving glass with sweet onion salt and set aside. Puree almonds, garlic and parsley. Combine all ingredients and stir over ice. Skewer garnishes and enjoy!
