    • 1 1/2 oz. Plymouth Gin
    • The Perfect Purée Carmelized Pineapple Concentrate,  2/3 thawed
    • 1/2 oz. The Perfect Purée Key Lime Concentrate,  thawed
    • 2/3 oz. simple syrup
    • 1/2 oz. heavy cream
    • 1 egg white
    • nutmeg (garnish)
    • Edible flower (garnish)
Method:
1. Combine all ingredients in shaker tin. Dry Shake in order to emulsify the egg white with the other ingredients. Then add ice to shake and shake hard for about 10 seconds. Double strain the cocktail through a hawthorne strainer and a fine strainer. Add ice and garnish with fresh grated nutmeg and edible flower. (Amaranth is in the picture)
