    • 3/4 oz. The Perfect Purée Carmelized Pineapple Concentrate,  thawed
    • 1/4 oz. The Perfect Purée Red Raspberry Puree,  thawed
    • 2 oz. Cazadores reposado
    • 1/4 oz. chipotle chile juice (from canned chipotle chiles)
    • 1/2 oz. agave nectar
    • 3/4 oz. fresh lime juice
    • raspberries for garnish
Method:
1. Combine all ingredients except foam and garnish, into a mixing glass. Add ice and shake with a Boston Shaker. Serve over the rocks in a margarita glass. Top with foam. Garnish with a couple raspberries. Serve.
Pineapple & Raspberry chipotle foam:
    • 4 oz. egg white
    • 4 oz. Cazadores Reposado Tequila
    • 6 oz. pineapple juice
    • 4 oz. The Perfect Purée Red Raspberry Puree,  thawed
    • 2 oz. chipotle chile juice (from can chipotle chiles)
Method:
1. Combine ingredients and add to a whipped cream dispenser with CO₂.
