Marinated and Glazed Fish Dish Marinated and Glazed Fish Dish Serves 4 Jenn Marr, Brand Ambassador Marinade Ingredients • 1 1/2 cups The Perfect Purée Ginger Sour blend, thawed • 1/4 cup shoyu • 1 tsp. black pepper • 1 stalk lemongrass split Glaze Ingredients • 1 cup The Perfect Purée Ginger Sour blend, thawed • 1/2 pineapple, small dice Method: 1. Marinate four 6 oz. fillets of tender white fish (Mahi Mahi, Ono, Snapper) for 2 hours in marinade. 2. Sear off starting skin down to a medium rare. 3. Prepare glaze by reducing pineapple in Ginger Sour until it forms a syrupy consistency. 4. Sauté fish in glaze until desired finishing temperature. 5. Serve over rice and noodles with Asian vegetables, crispy fried garlic and chili pepper oil. 6. Garnish with kulantro, green onion and crispy prosciutto.
