Papaya–Honey Creme Fraiche Dressing

Yields: 54 oz.

Preparation time: 15 minutes plus standing time for créme fraiche

    • 8 oz. heavy whipping cream
    • 8 oz. sour cream
    • 30 oz. The Perfect Purée Papaya,  thawed
    • 3 oz. honey
Method:
1. Stir together heavy cream and sour cream. Cover and refrigerate overnight to make creme fraiche.
2. Whisk together creme fraiche, Papaya puree, and honey until well blended. Cover and refrigerate until needed.
Flavor Twists:
Prepare this dressing in a new way by substituting Apricot, White Peach orMango for the Papaya puree.
Serve this rich, creamy mixture over a fresh fruit salad, chilled steamed asparagus, mixed into a Waldorf salad, or draped over chilled barbecued chicken or turkey.
