|•||2 oz. demi-glace|
|1.||In a saucepot combine Prickly Pear puree and demi-glace. Bring mixture to boiling; reduce heat to medium. Simmer, stirring frequently, until mixture is reduced by half.|
|2.||Transfer to a bain marie to hold for service.|
