Oz Serafin of Jack Rose Libation House

3/4 oz. Breckenridge Bourbon
1 oz. Blood Orange and Pineapple Tepache
2 oz. The Perfect Purée Blood Orange Concentrate, thawed
1/4 oz. lemon
3/4 oz. sparkling wine (Brut)
2 oz. grapefruit soda
1 dash cocoa nib tincture or chocolate bitters
Method:
Combine all ingredients (except the grapefruit soda) in a cocktail shaker with ice. Shake vigorously. Strain into an iced highball glass. Top with grapefruit soda and stir. Garnish with dehydrated lime wheel.
