    • 1 1/2 oz Pisco El Gobernador
    • 1/2 oz. triple sec
    • 1/4 oz. Campari liqueur
    • 1 oz. The Perfect Purée Chipotle Sour blend, thawed
    • 1/2 oz. fresh lemon juice
    • 1 egg white
    • 2 dashes Angostura bitters
    • Flamed and discarded orange peel (garnish)
Method:
1. Shake the egg white with one ice cube in a shaker tin. Add a bar spoon of Campari to the Martini glass and roll, coating all sides. Add all ingredients, except for the garnish, in the shaker tin with the egg whites and add ice. Hard shake, and double strain into the prepared Martini glass, served up. Float the 1/4 oz. of Campari on top of the cocktail using the back of a bar spoon. For the garnish, squeeze an orange peel behind a lit match over the finished cocktail, creating a flame of orange oils and discard the spent orange peel.
