| • | 3/4 oz. The Perfect Purée Ginger Puree, thawed |
| • | 5 oz simple syrup |
| • | 3/4 oz. fresh squeezed lemon juice |
| • | soda water (to top) |
| • | lemon horse neck (garnish) |
| Method: | |
| 1. | Place all ingredients in cocktail shaker except for soda water. Gently shake as to not water down but merely chill the cocktail. Insert the lemon horses neck and cover with crushed ice. Pour contents of shaker into collins glass and fill with soda water. |
