Carmelized Mai tai

1 drink

    • 1 1/2 oz. Carmelized Pineapple,  thawed
    • 1/4 oz. Meyer Lemon,  thawed
    • 1 oz. light rum
    • 1/2 oz orgeat syrup
    • Li Hing Mui powder, for rimmer (optional)
Method:
1. Rum rim of glass with Meyer Lemon, dip into Li Hing Mui powder. Set aside.
2. Combine all ingredients into a cocktail shaker filled with ice.
3. Shake vigorously for 10 seconds.
3. Pour into a martini glass and garnish with a grilled pineapple wedge.
4. Serve.
