Passion Fruit Drinking Vinegar

For the Passion Fruit Drinking Vinegar Batch:
•	1 qt. The Perfect Purée Passion Fruit Concentrate, thawed
•	1 qt. coconut vinegar
•	1 qt. organic sugar cane
•	2 cups filtered water
•	2 tsp. salt
•	1 tsp. citric acid

Method for the Passion Fruit Drinking Vinegar Batch:
	Stir to dissolve (may take some time).

For the Passion Fruit Drinking Vinegar to serve:
•	1 1/2 oz. Passion Fruit Drinking Vinegar
•	Soda water
•	Mint sprig (for garnish)

Method:
	Serve drinking vinegar in a Collins glass with soda water and ice. Stir to incorporate. Garnish with a sprig of mint.
