Strawberry Kiwi Soup Strawberry Kiwi Soup 8 servings 30 minutes, plus 24 hours standing • 4 oz. sour cream • 4 oz. whipping cream • 16 oz. The Perfect Purée Strawberry, thawed • 16 oz. The Perfect Purée Kiwi, thawed • 8 oz. dry white table wine • 1 cup sifted confectioner’s sugar Method: 1. In a bowl stir together sour cream and whipping cream. Cover and chill in refrigerator for 24 hours to make creme fraiche. 2. In a large saucepot stir together Strawberry puree, Kiwi puree, wine, and sugar. Bring mixture to boiling; remove from heat and cool completely. 3. Transfer cooled puree mixture to a large mixing bowl; fold in creme fraiche. Cover and chill in refrigerator until serving time.
